WOW! That would be so epic to play through! I did indeed initially balk at the Tomb of Horrors climax... but you managed to talk me into it. A great way to go out.
I won't dispute your preference for Cult of the Reptile God and Caves of Chaos, they're obviously great classics. But Saltmarsh is about as good, and an extended mystery that demands a lot of thinking, and so my choice for kicking things off.
